There's a dizzying number of knife styles in Japan. Variations abound according to regional industries, harvests and cuisine, some sport new profiles created to simply stand out from the crowd. One thing they all have in common is that they are satisfyingly sharp.

As is the case with the Fukamizu Hamono yasai-bocho. 'Yasai' is the Japanese for vegetable, the word encompasses the full spectrum of edible plants and is written with the characters 野菜 representing field and leaf (quick aside: 菜 is the 'na' in nakiri)

It's a unique knife style we haven't encountered elsewhere - a narrow bevel angle on a not very tall blade. Ideal for cutting tubers, alliums, rhizomes, roots and any leafy vegetable. And it's light! Half the weight of a typical nakiri. And like any nakiri it will function perfectly well as a mainstay knife for family meals with an emphasis on vegetables. 

Possibly not very suitable for cutting in the hand, but good on the board. Great steel, surprising price. Free delivery worldwide.
