  1. Small - But Cuts Above It Weight!

    Although this is a ginger knife by name, please do not let the name fool you into thinking it is a one trick pony. Every once in a while you find a kitchen tool that exceeds your every expectation; this is one of those times.

    I use this black forged finished (kurouchi) knife by Iwami Okamitsu on many small to medium sized vegetables (and fruits also).
    The main tasks for this knife have been the preparation of vegetables including charlottes, capsicums, carrots, spring onions, leeks, small sweet potatoes, zucchini and mushrooms. Would also suit slicing and dicing of herbs, garlic and of course ginger too! Best suited for use directly on the chopping block (point is, it is versatile - well above and beyond its name and size).

    Looking at the length of the blade I had some concern about knuckle clearance on the wooden block. Not really an issue. The blade-smith has angled the blade slightly upwards with this very concern in mind. This upward angle allows the blade to hit the block, yet your knuckles are still quite clear for most of the cut, allowing you to use this like a knife twice the size.

    This blade has a very nice geometry from the spine to the apex, tapering down to an extremely sharp edge; ready out of the box to use as is (this is the sharpest knife out of the box I have ordered so far). It allows easy slicing of foods which simply and easily pass through without any drag! The kurouchi finish not only adds to the overall rustic look, but will aid in rust resistance also for those concerned about the Aogami (blue steel) no.1

    At under 50grams, this knife is extremely light and it is hard to believe this lightweight knife can work so hard. When you cut and slice for some-time during meal preparation the weight of a knife becomes more and more important (every gram counts). This knife does not make the job any harder for you, by adding unnecessary weight. A knife that works with you not against!

    The ginger knife comes with a simple and lightweight Magnoilia handle. However, Michael is happy to discuss a handle replacement with a higher grade handle on request. If you like to wash your knife handles constantly, consider that option as magnolia wood is quite permeable.

    Many knives cut and do the job well, but that is where their contribution ends. This knife although small, adds comfort and enjoyment to the task at hand, and I have found myself cutting a few extra potatoes just so I could continue using it for a little longer. A real gem....
