There are knife makers who also forge scissors and shears, and if there's one thing we've learned it's that the guys who forge two blades to work in perfect unison can certainly make a fine single blade. Tosa city's Sasaoka Hasamiya is a great example. 

Sasaoka san's ko-bocho is taller than his petty at the same length, which helps that little bit when herding vegetables and other cuttings around. Interestingly the blade is also slightly thinner than the petty, though that may be put down to it being a handcrafted item; we can expect slight variation in weight and length from knife to knife. What you can certainly expect is a very sharp knife out of the box.

The walnut used in the handle will retain its appearance for many years. It reflects Sasaoka san's philosophy of naga-mochi, or 'long use'. We also like that he uses resin to protect the tang from water ingress. Nice touch.

    This knife has it all on one package, from the attractive walnut handle to the shiny Aogami (blue steel) no.2 blade(of course the shiny steel will change with use and grow a patina). If you are searching for a knife that not only looks great but functions above its weight, this is one to consider. What drew me to this knife (and now makes it one of the stand-out knives in my collection) is the overall fit and finish Sasaoka-san has put into this knife; you can see it and feel it (including the attractive presentation box).

    The handle is made from walnut, which is a very durable and a highly water resistant hardwood (that is up to years of use), but even then walnut could simply could get by on looks alone. The tang is sealed at the opening of the handle to stop any liquids or moisture entering the handle which could cause rust or bacteria issues (it is great to see a knife-maker take care of this potential problem).

    Many may be concerned about the Aogami (blue steel) no. 2 blade. Do not be concerned. Carbon steel will rust if mistreated, that is a given, but with a simple maintenance routine during use, this can be avoided. Even if some small rust spots do develop, a simple slurry stone (or fine grit whetstone can remove it simply and easily). Otherwise, overtime an attractive patina will develop to help protect the blade, giving generations of users the chance to use and own a hand forged blade (sadly a craft now dying out).

    I use this knife for a variety of vegetables and fruits. It is a nicely weighted knife that that works well when slicing larger vegetables like sweet potatoes and pumpkin quarters and of course all smaller foods like apples, capsicum etc. I have found this knife a great go to when a paring knife is too small but a larger carving knife is too large. This makes it a very versatile blade that gets used more than either of the previous two (and you could get away with just this knife for most tasks if you don’t want to be buying a set of multiple knives).
