Some knives stand out simply because they look the business. This gyuto ticks a lot of boxes but we'd put the blade design at the top of that list. A good example of the maker Kusunoki san enjoying his work and choosing the road less travelled.

The size of this gyuto makes it useable in a workspace of any size. Less is more: at just 123 grams it is uncommonly light. The tapering profile and sharply defined tip give it a singular look and feel and keep blade material and weight to a minimum. Finger clearance is sufficient rather than exceptional - if you require a taller blade let us know and we can ask Kusunoki san to forge a knife for you accordingly. Sharpness certainly won't disappoint, neither will the feel of this knife in use. Reports have it that edge life is beyond excellent.

Small family concern Unshu Yukimitsu Hamono is based in Shimane Prefecture's Okuizumo district, arguably the spiritual home of Japanese steel. The company is a well-known maker in western Japan with a history of fine craftsmanship that reaches all the way back to the 1830's, with a range of knives sought out by buyers the length and breadth of the country. Kusunoki san works at capacity throughout the year and we are fortunate to offer his products here at Knife Japan.
