All Unshu Yukimitsu Hamono blades are beautifully finished and this 190mm, 7½ inch yanagiba is no exception. Here the Aogami#2/nantetsu blade is attached to a very pretty octagonal handle in hiba wood, a slow-growing conifer sourced from northernmost Honshu. Hiba is not a particularly rare timber but it is rare to see such a valuable wood used in Japanese knife handles. Supply of these handles is limited and this combination is not likely to be offered for long.

Work space, storage and sharpening are three considerations when buying a sashimi knife. Price is of course another. Many will recommend investing in a yanagiba of 270mm or longer for the ultimate tool but you need the space to use it, clean it and store it, and one day you'll need to sharpen it. A knife of this length is often an easier fit.
