Unshu Yukimitsu Hamono Yanagiba 205mm
Work space, storage and sharpening are three considerations when buying a sashimi knife. Price is of course another. Many will recommend investing in a yanagiba of 270mm or longer for the ultimate tool but you need the space to use it, clean it and store it, and one day you'll need to sharpen it. A knife of this length is often an easier fit. The long-held standard for Japanese homes is 6-sun or thereabouts, this knife is a shade longer.
The history of this knife maker reaches back to the late Edo era. Unshu Yukimitsu Hamono began as a family concern producing edge tools in the mid 1830's in what was Izumo Province. Okuizumo where the Kusunoki family still lives is in the true heartland of Japanese steel culture. Mr Kusunoki takes great pride in his work and it shows in this knife.
