Shika is the Japanese for deer, and the shika-sabaki might be best translated as a deer-divider. It's specifically for breaking down Cervus nippon, the deer that inhabits the islands near Ikenami Hamono's home island of Tanegashima.

No two ways about it, the shika-sabaki toku-dai ('special big deer divider') is a monster. This is the knife for breaking down large game. A knife you would bring the animal to.

    I am a butcher/chef, but also a japanese knife enthusiast, and have been searching for a knife such as this for several years now. Let me say first of all, a japanese knife (made with good Hitachi steel) of this shape is exceedingly rare. This knife is a marvel to behold. It is not cheap, but it is worth every penny. I've never been so happy with a (knife) purchase. I was told that there is only one other left, and if I were wealthier, I would buy it in a second. It was also one of the top 5 sharpest knives OOTB that I ever bought. (Which, especially for such a massive knife, is quite impressive).
