Sasaoka Hasami was founded in Tosa city by Eiji Sasaoka over sixty years ago, after long training in Sakai. At the time the company produced hand-forged western and Japanese scissors, and precision shears for bonsai, ikebana and professional gardeners.
And here's the thing - making scissors by hand requires high levels of skill, and we know a craftsman who forges scissors for a living can make a good knife. At least that's been our experience. Sasaoka san forges both, and buyers can be confident in the quality of his work.
Today kitchen knives account for about half of the company's production. All hand-forged and with quality handles. This compact kataha (single bevel) deba knife is a great example of Sasaoka Hasami's fine work.
Aogami#2 steel offers great cutting feel and good edge life. At 15 centimetres / 5.9 inches in blade length this short deba is ideal for pan-sized-and-under fish, poultry and crustaceans. Use it without scaring your visitors, or yourself. An excellent choice for small work spaces.
