Takefu Knife Village knife maker Kamotou has worked with Associate Professor Shigeto Takimoto of Sugiyama Jogakuen University in Nagoya to produce the katate-bocho adaptive kitchen knife for one-handed meal preparation. Suitable for left-handed or right-handed use.

Thin, and very sharp. Excellent functionality and design allowing confident cutting by users who may lack strength in their hands. Technology backed by tradition.
