- Kawatsu Hamono Kurouchi Stainless Funayuki-bocho 120mm
Product Description
So tidy.
Then, the funayuki is a tidy knife. As a style it evolved as a practical on-the-boat blade, big boats where meals are prepared. Good as an only knife in small spaces and away from wherever your long yanagiba might be. At under 5 inches this is a short funayuki; meat, fish, vegetables, all good.
Kawatsu san uses a solid class of materials to put this knife together - YSS aogami#2 sandwiched between stainless steel and given the aesthetically pleasing black-blade treatment, beautifully sharpened and attached to a quality keyaki handle that will last in wet circumstances. Watch for rust on the edge - a run under hot water before drying is good practice.
Kawatsu Hamono's black-forged blades combine a touch of wa sensibility with modern practicality and a finish that satisfies a craftsman's eye. We love Kawatsu san's exacting approach - you can see it in his well-ordered work space and every knife he makes.
