Kayaki 'mosquito-forging' blades have been around since the Edo period, so there's a nice sense of history accompanying Kuwahara san's knives. We're yet to uncover all the ins and outs of the process of mosquito forging but we can say we would happily have this knife in our kitchen.
It's beautifully light and sharp and not too long - ideal for singles and couples who like their vegetables and perhaps work in a modest space. We'd also recommend it for senior users still cooking for themselves - it doesn't call for a lot of strength in the wrist and the point is easily usable without angling the knife. Nice.
