Kawa - skin or peel, as in apple peel. Muku - to skin or to peel. There we have it, this Japanese knife might be thought of as a skin skinner or a peel peeler. Sharp removal tool for the outer protective layer of a fruit or vegetable? Sometimes another language just seems to do it better.
And this little kawamuki does it very well indeed. Unlike the common garden-variety kawamuki Minomo Hamono's new-fangled version is closer to a pocket knife in blade shape, easy to use in the hand and forgiving of a bit more wristiness, and quite possibly the most fashionable kawamuki we know.
