Moriya Munemitsu YHC is a subsidiary of Hitachi Materials Magic, which puts it in very fine company indeed. One fellow subsidiary is Yasugi Specialty Steels ('YSS'), producers of the cutlery-grade stainless steel from which this yanagiba is produced. The two companies share premises, in fact.
The Moriya Munemitsu Gingami nakiri is a vegetable-specific knife for the home kitchen, a good size for dealing with cabbage and other large-leaved vegetables, ideal for processing vegetables used in family meals. The flat edge is great on the chopping board, assisting with every Japanese cutting style - sengiri is perhaps the best known but there are at least a dozen other ~giris to explore and practise. The nakiri is kept away from meat and fish so another knife will usually be needed, but for vegetables this knife will do everything you need and the blade is all stainless.
The formed handle is goban, a durable handle material of compressed wood fibre and resin that will retain its beauty and integrity for many years. This 'kuchigane' handle features an integrated steel bolster. Full-tang construction lends strength and balance and high standards of fit and finish complete the package.
