Moriya Munemitsu YHC belongs to the same group of companies as Yasugi Specialty Steels ('YSS'), producers of the fine Gingami#3 stainless steel from which this knife is produced. In the words of the producer this steel provides hardness and sharpness that's comparable to carbon steel.
The Gingami santoku is a multi-purpose knife for the home kitchen. It provides traditional Japanese cutting feel in a true easy-care package, ideal as the go-to kitchen tool for portioning proteins and processing vegetables for family meals of any size. Large enough to deal with cabbage and other large-leaved vegetables yet comfortable in compact workspaces.
The formed handle is goban, a durable handle material of compressed wood fibre and resin that will retain its beauty and integrity for many years. The 'kuchigane' variant with stainless steel bolster makes this knife suitable where sterilization is mandated. Suitable for both left and right handers.
Full-tang construction lends strength and balance and high standards of fit and finish complete the package.
