Moriya Munemitsu YHC belongs to the same group of companies as Yasugi Specialty Steels ('YSS'), producers of the fine Gingami#3 stainless steel from which this knife is produced, a stainless steel offering hardness and sharpness comparable to carbon steel.
The Moriya Munemitsu Gingami nakiri is a vegetable-specific knife for the home kitchen, a good size for dealing with cabbage and other large-leaved vegetables, ideal for processing vegetables used in family meals. The flat edge is great on the chopping board, assisting with every Japanese cutting style - sengiri is perhaps the best known but there are at least a dozen other ~giris to explore and practise. The nakiri is kept away from meat and fish so another knife will usually be needed, but for vegetables this knife will do everything you need and it's all stainless.
The formed handle is goban, a durable handle material of compressed wood fibre and resin that will retain its beauty and integrity for many years. Full-tang construction lends strength and balance and high standards of fit and finish complete the package.
