Moriya Munemitsu YHC belongs to the same group of companies as Yasugi Specialty Steels ('YSS'), producers of the fine Aogami Super and Gingami#3 stainless steels from which this knife is produced. They know what they're doing.
Aogami Super is the highest grade YSS cutlery steel and the company's knives showcase its properties of terrific sharpness and superior wear resistance. Manufacture is highly automated and while that may not be as romantic as some of the same company's artisanal wa-bocho, standards and quality control are industry-leading. Heat treatment is exacting.
The AS santoku is a general-purpose knife for the home kitchen that offers that wicked Aogami Super sharpness in an easy-care package. Great for processing vegetables and further portioning smaller cuts of meat and fish from the supermarket. Easy care due in large part to the Gingami stainless steel enveloping the aogami super, however note that the 5mm or so of the cutting edge will develop rust spots if not cared for. Wash well and rinse the blade in hot water before wiping dry. The handle is goban, a durable handle material of compressed wood fibre and resin that will retain its strength and attractive appearance for many years.
Full-tang construction lends strength and balance. Excellent fit and finish. Great steel. Superior sharpness.
