HAP40 high speed steel offers great sharpness and edge retention - it's very slow to dull and that means conveniently long stretches between sharpening sessions. That's good, because high speed steel is also very slow to sharpen, so those sharpening sessions might be long.

It's all about convenience and cutting feel. This is a short, light, rust-resistant all-rounder with wonderful cutting feel. Sharpening - maybe once a year even if used every day. The sandalwood handle feels great and will last forever.

    Pros:

    - Excellent edge retention
    - Great cutting feel/performance
    - Comfortable handle
    - Even grind, straight blade
    - Easy to sharpen
    - Best value
    - Great customer service

    Cons:

    - Fit and finish

    Other Thoughts:

    - Average out of the box sharpness.
    - Surprisingly easy to sharpen with a King Neo 800 grit stone (considering HAP40's reputation).
    - After over three months of daily (ab)use, it is still as sharp as the first day.
    - Perfect size for both in hand use and on the board.
    - I'd suggest the 180mm version if you plan to use it mainly on a cutting board.
    - Will patina very easily; make sure to full dry it after use.
    - Handle is not perfect and there are a lot of stray scratches on the blade, but they don't affect performance.
    - The cheapest HAP40 knife I could find online.

    I bought this knife because of its HAP40 blade. After having browsed dozens of internet shops I found it is by far the cheapest offer on the market featuring this ultra steel. Fit and finish is not perfect, with the rivet heads not totally flush and the bevel surface a bit uneven on my copy. OK; that proves it is handmade. Look at the the product photos on this website, they are honest. These details of course do not impair cutting ability.
    A highlight worth mentioning is the extremely small bevel angle. When it comes to cutting hard vegetables, like onions, bevel angle is at least as important as sharpness, and this knife beats the other two Hochos that I own. In numbers: The blade is 1.00mm thick at a distance of 11mm from the cutting edge.
    And I should not forget to mention Mr. Shaws great customer support. I had problems with Paypal during the ordering process, but Mr. Shaw fixed that quickly.
