Product Description
Black-forged stainless is a great finish that cloaks modern rust-resistant convenience in a traditional appearance. In this case in a longish nakiri that just begs to be taken to great handfuls of chard and cabbage leaves. Low maintenance Japanese sharpness at one end, warm in hand at the other - the scorched magnolia makes for a beautifully tactile handle.
The blade is pre-formed rolled steel - stainless-clad aogami#2 - and note that while the blade is stainless steel the cutting edge is high carbon steel and will oxidise if left sitting wet. A trade-off for traditional Japanese sharpness.
