Yoshimitsu Kajiya Nakiri-chu 155mm Shirogami #2

Ide san produces a variety of nakiri knives, some long, some tall, some small. Here we present the ゴルディロックス (in English, Goldilocks) 'chu' or medium size. Not too big, not too small, just right.

Sharpness first and foremost. It's not easy to discern in our images but the cutting edge of this knife sports a mirror-polish that speaks to the final sharpening that every nakiri deserves. 

As a hand-forged item measures are going to vary slightly, usually a fraction over stated length. The knife in our photos was close to 160mm.
