Product Description
Ide san produces a variety of nakiri knives, some long, some tall, some small. This one is small. 'Sho' means small in Japanese.
Sharpness first and foremost. It's not easy to discern in our images but the cutting edge of this knife sports a mirror-polish that speaks to the final sharpening that every small nakiri deserves.
No, it won't see you catering for crowds. But you will find many uses for it, and wonder why you haven't had a nakiri sho to use before now. Or why you haven't had this nakiri sho to hand before now.
As a hand-forged item measures are going to vary slightly, usually a fraction over stated length. The knife in our photos was more like 125mm. Nice, isn't it.
