You may be familiar with ikejime, the technique of immediate slaughter of a fish after taking, with the insertion of a spike or blade into the hindbrain, relaxing the fish and preventing reflex movements that degrade the flesh. A humane end for the fish and a better-tasting meal. Win-win.
Pushing a blade into the fish's head safely is an additional priority. The shime-bocho is gripped with the blade inverted and with the thumb stabilizing the blade as it is thrust into the animal. Very secure.
