Western-style handles
It's said that western knives are sculpted to the user's hand, and the user adapts to the Japanese counterpart. Traditional 'wa' handles are simple. There seems to be a difference in outlook - more than once we've heard a Japanese knife maker comment that 'you don't cut with the handle'. We'll let that one go through to the catcher but it reveals the primacy of the steel in the Japanese experience.
