Product Description
Kawa means skin, muku to peel. This is the knife for peeling fruit (something Japanese are passionate about) and vegetables. It's a special-purpose blade, short and thin, strengthened by the nantetsu outer layer and delightfully stiff. Great for little jobs around the kitchen, almost a mini-mini-nakiri.
The hand-forged, very hard shirogami#1 steel takes an astonishing edge yet is easily sharpened. Tanegashima Island knives are known for their cutting feel and the kawamuki is no exception. Note that this blade is high-carbon steel and will rust if not maintained: wipe after use, rinse in hot water before drying and store sensibly, and rust will never be a problem.
