Product Description
Kawa means skin, muku to peel. This knife is well suited to peeling fruit (something Japanese are passionate about) and vegetables. It's a special-purpose blade, thin at just 1.5mm, delightfully stiff. Great for little jobs around the kitchen, almost a mini-mini-nakiri.
The hand-forged, very hard shirogami#1 steel takes an astonishing edge yet is easily sharpened. Tanegashima Island knives are known for their cutting feel and the kawamuki is no exception. Note that the high carbon steel will rust if not maintained: wipe after use, rinse in hot water before drying, store sensibly and rust will never be a problem.
