The Ikenami Hamono shika-sabaki works as a hunting knife, survival knife, fishing knife or camping companion. The YSS white#1 hagane core gets seriously sharp. Japanese sharp. It's not rust resistant but it's easily sharpened out in the bush and that counts for a lot. This knife is strong, sharp and, we think, very beautiful.
Shika is the Japanese for deer, and the shika-sabaki might be best translated as a deer-divider. It's specifically for breaking down Cervus nippon, the deer that inhabits the islands near Ikenami Hamono's home island of Tanegashima. The angled fore blade and the pronounced forward edge allow cutting outward as meat is separated from bone.
One comment we've received around the shika-sabaki is not about the knife itself, it's that we don't sell a sheath for it. Fair call. We can see that knife of this caliber deserves a well-designed sheath that allows it to be carried at all times but the sad truth is we don't have one. Order this knife knowing that a sheath is something else you might want to organise.
