The funayuki style derives from fishing and maritime use - a short, sharp, versatile blade for long fishing expeditions, ideal for preparing meals in galleys and confined spaces. Kawatsu san's shortest funayuki sports a very tidy blade but for us it's the zelkova hardwood handle that lifts this little knife to another level, both in terms of aesthetic appeal and naga-mochi - that wonderful Japanese notion of long-term use. Zelkova (keyaki in Japanese) is tough, hard and beautifully grained. The only reason we don't see more of it is availability and price - magnolia wins there, zelkova everywhere else. In our opinion at least - our home kitchen counter top is zelkova. Love it.

Kawatsu Hamono's black-forged blades combine a touch of wa sensibility with modern practicality and a finish that satisfies a craftsman's eye. We love Kawatsu san's exacting approach - you can see it in his well-ordered workspace and every knife he makes.

  1. The Little Knife That Is A Big Surprise!

    Let me say right up front, I love this knife and it is firmly planted in my regular lineup. I picked this up to supplement my larger honesuki and thought it might be handy here and there beyond that. Wow did I underestimate how handy I would find it! My hand grabs the handle of this knife often. It is so nimble but still tall enough to be quite usable in many ways.

    I absolutely use it to breakdown chickens and it does great at the task. It would be great at small to medium fish too. But it's also a great utility knife, fruit knife, quick task knife and on and on.

    The steel is really nice, holding its edge well and sharpening up nicely. I wish I would've bought one of these a long time ago!
