Hand-forged from high-quality steel and sporting a beautiful and durable keyaki (zelkova) handle, there's not much more you could ask for in a black-forged nakiri. Kawatsu san's nakiri follows the formula closely: flat edge for clean and predictable separation of leafy vegetables on the board, thin to slice-not-split root vegetables and squash. All nakiri knives are created for preparing soft-target veg and this one offers everything to do the job in a package balancing quality and value.
