Hand-forged from high-quality steel and sporting a beautiful and durable keyaki (zelkova) handle, there's not much more you could ask for in a black-forged nakiri. Kawatsu san's nakiri follows the formula closely: flat edge for clean and predictable separation of leafy vegetables on the board, thin to slice-not-split root vegetables and squash. All nakiri knives are created for preparing soft-target veg and this one offers everything to do the job in a package balancing quality and value.

Great all-rounder

I’ve had this for a couple months now and I’m quite a big fan. Convex slightly thicker grind on the rear half, flatter and thinner grind with a hint of forged S on the front half. Height and weight are just enough to make it feel substantial and powerful hand. Overall, a great daily driver that’s handled a wide variety of ingredients quite well!
Steel feels on the softer side and exceptionally sturdy, like a sweet spot that makes it both hard to bend or flex and hard to chip or break.
I love the way this thing presents itself as well. The kurouchi is very even and possibly the sturdiest I’ve seen in a while. The handle has some very vibrant wood in it; much different from the other couple of keyaki handles I’ve had. There’s a general display of excellent craftsmanship to be found everywhere you look. The kurouchi is even, the grind marks are all even, the hammer marks along the spine are even; the little things like that show the unusually high level of precision for the price.
A couple points of interest: it came slathered in lacquer, so much so that I mistook a bit of bluing in the kurouchi for extra lacquer because I couldn’t tell the difference. Also, it came very much not sharp. Not abysmally dull, but definitely begging for a heavy touch up. Neither point is surprising for rustic knives, but knowing for sure you’ll need a stone and some acetone handy is always better.
Overall, great experience, would buy again without hesitation. Fantastic service, comms, and shipping from Michael as always!
