- Moriya Munemitsu Kuchigane Petty Knife 150mm Aogami Super
Product Description
Moriya Munemitsu YHC belongs to the same group of companies as Yasugi Specialty Steels ('YSS'), producers of the fine Aogami Super Steel and Gingami#3 stainless steel from which this knife is produced.
Aogami Super is the highest grade cutlery steel produced by YSS and the company's knives showcase its properties of terrific sharpness and superior wear resistance. Manufacture of this petty knife is highly automated and while that may not be as romantic as some of the same company's artisanal wa-bocho, standards and quality control are industry-leading. Heat treatment is exacting.
The AS Petty is a compact multi-use knife for the home kitchen that combines true Japanese sharpness with the convenience of stainless steel, however note that the hagane edge will be prone to rust. Wash the knife well after use, rinse the blade in hot water before wiping dry and it won't be an issue.
That perfect handle is goban (commonly called pakkawood), a durable material of compressed wood fibre and resin that will retain its integrity and attractive finish for many years. This 'kuchigane' variant with its stainless steel bolster makes this petty suitable for environments where tool sterilisation is mandated.
Full-tang construction lends strength and balance. Excellent fit and finish. Great steel. Superior sharpness.
