The Moriya Munemitsu G-series petty knife has much to recommend it, not least of which from the Japanese perspective is trust in the brand. For readers who can't decipher the Japanese on the blade the katakana characters to the right of YHC read 'Yasuki Hagane'. YHC itself stands for Yasugi Hagane Cutlery.
Readers may recognise Yasugi Hagane as a brand name of Yasugi Specialty Steels, the Hitachi subsidiary that produces some of Japan's finest cutlery steels, the Gingami#3 stainless steel used in this knife among them. Moriya Munemitsu YHC is a fellow subsidiary. Gingami#3 is a steel that combines high rust-resistance with properties of hardness and sharpness that are comparable to carbon steel.
The G-series petty is a practical multi-use knife for the home kitchen that offers Japanese sharpness in a light, low-maintenance package. Full-tang three-rivet construction lends strength and balance. The sculpted goban wood fibre and resin handle is beautiful and durable and feels great in the hand. Fit and finish are excellent.
