HAP40 high speed steel offers great sharpness and edge retention - it's very slow to dull and that means conveniently long stretches between sharpening sessions. That's good, because high speed steel is also very slow to sharpen, so those sharpening sessions might be long.
It's all about convenience and cutting feel. This is a light-for-its-length, rust-resistant all-rounder with wonderful cutting feel. Sharpening - maybe once a year even if used every day. The sandalwood handle feels great and will last forever. The tall blade path offers excellent cutting feel. This is quite possibly one of the absolute BEST HAP40 Santoku knives I have had the pleasure of using. There are some others from Knife Japan that are great as well, but I love basically EVERYTHING Nakamura San produces.
This knife is wicked sharp straight from the box, and takes a wicked edge that I love to apply on all my knives. HAP40 steel will also make the need to sharpen often a thing of the past, as it's edge retention is superb.
This knife will slice and dice anything you throw at it, not to mention it's light weight feeling makes it a joy to use. If you are on the fence about this knife, do NOT hesitate, it's an amazing piece for an even more amazing price. You cannot go wrong, and ordering from Michael is top tier. I look here first before I order ANY knife. if Michael has it, you better believe I buy it from him. This is the only place I buy knives from anymore for the most part.
