We love the buttery, hand-crafted look of a black-forged deba blade, well enough to pay a premium for it. Lucky for us it works the other way around - black-forged ryōba deba knives offer a significant saving over their single-bevel counterparts. The Nojiyama Marunaka deba represents great value.
The modest length and weight suit a home kitchen well. The size works for whole fish of a size most of us might see regularly and for breaking down poultry and crustaceans; the robust edge will crunch-cut where called for and provide slick slicing in the same session.
Easy sharpening, straightforward maintenance and the added attraction of a rust-inhibiting kurouchi finish.
