The hamokiri bocho is long and very heavy, and there's a reason for that. 'Hamo' is pike conger eel, a fish with a delicately-flavoured white flesh that requires special preparation. It's a little difficult to describe so if you're interested take a look at this (rather poetic) two-and-a-half minute video that shows how it's done. Rhythmically cross-slicing through flesh and bone - but not skin - along the length of the fish, in millimetre increments, demands sufficient weight for the knife to do all the work.

How else you'd use a hamokiri, we really don't know. Mounted on the kitchen wall? Set in a large stone perhaps. We liken this wonderful mirror-finish hamokiri to the S-class Benz. Kind of expensive. Not everyone needs one. A pain to park. A scratch would evoke tearful self-recrimination. But this Toyonaga Hamono high-end halo product is simply a thing of beauty, and rust-resistant into the bargain.
