'Nakiri Senyo' is Unshu Chuzen Hamono's way of saying 'vegetables only' in what we imagine to be a very firm voice. No-one will write you a ticket if you use this knife otherwise but the blade is so thin we recommend you use it as intended. On vegetables.

This bunka-gata nakiri is unusual in a couple of ways. The blade is slightly less tall than most nakiri knives, the reverse tanto profile is not standard nakiri fare either. In hand the knife feels chunky but light. The handle is quite large but the knife as whole doesn't feel unwieldy and will suit all but the smallest hands. 

Look closely at our photographs and you'll see a material line on the blade neck a couple of centimetres from the handle. That's where the white#1 steel and soft iron warikomi blade meets a stainless steel neck and tang. The reason for this is that over time the tang inside the handle can be a point of hidden rust.

It's a mark of the maker that Unshu Chuzen Hamono cares to future-proof their knives in this way. The underlying philosophy is 'naga-mochi', of making use of their product for a very long time. We like that.

    This is a lovely knife and comes with even nicer service. I am no expert on knives but with finally moving into my own place, getting good knives was on the top of my list! This is my first Hand-forged Japanese knife and I am so glad I got it! It cuts so smoothly, even things I was expecting a little resistance on like carrots and squash. The weight is more centered in the blade rather than the handle without feeling awkward or unbalanced, it slices and chops without much effort. I process a lot of vegetables and this is a wonderful knife to do it with, I always want to keep going after I'm done! I am looking forward to having this knife in my collection for years to come.

    I knew I wanted to get a Nakiri when I first learned of Japanese style knives, and with all the Chinese made knives flooding the market at cheaper prices I was tempted to buy one of them but preferred to find one that was actually made in Japan because of what I've heard is the difference in the culture that surrounds knife-making in Japan. this distributor made it possible for me to find the best knife possible for my budget and I am in no way disappointed. From the emails exchanged with Michael it is apparent that Knife Japan cares for it's customers AND it's suppliers, forging relationships with each knife maker to provide a quality product.

    I was a bit skeptical about ordering from Knife Japan at first because I could not find any third party reviews or see any reviews on the knives I wanted to purchase, so I hope this helps you choose to order your knife here.
