Product Description

We're VERY happy to have kicked things off with Yashima Nogu Kogyo, and the nakiri knives they offer are a big part of that. There are plenty of users out there seeking a longer nakiri blade and now we have two more.

This is Yashima san's aogami nakiri and in comparison with its shirogami stablemate it will be slower to sharpen and (flipside) hold its edge longer. Aogami is said to be less brittle than shirogami and if you like to be a little more, ahem, wide-ranging in the way you use a nakiri then this tougher steel is the better choice. Aogami is a little less susceptible to oxidisation but best not to take that for granted.

Blade steel: YSS Aogami | nantetsu
Bevel: Ryōba double bevel

Overall Length: 335mm
