Very much hand crafted by Zakuri co-op stalwart Nishioka san in Kochi Prefecture. There's variation across every measure.
We've always liked a deep, consistent kurouchi finish and how light can play off buttery impact marks on a blade. It's an aesthetic that drew us to Japanese blades in the first place. It's very much in evidence with Nishioka san's blades and with his long gyuto there's simply more of it to take pleasure in. A handsome cutter!
It's not all about looks of course. Your mother told you that. Consider cutting feel, practicality and the keen price. Looks are a bonus.
