When more of these knives were collected on a recent trip to Hitoyoshi City the Minomo lads couldn't remember what they call it. We ended up with sabaki on the paperwork. Sabaki-bocho 210mm.
Still looks like a gyuto to us. Or maybe better than a gyuto? Good looks, good length. A lovely cutter made by a master.
