Japanese knife names can get confusing. 'Kaku-bocho' refers to the square shape of this pretty little knife.

In Japanese a triangle is a 'sankaku', 'san' meaning three. A square is a 'shikaku', 'shi' in this case meaning four. Angle is 'kaku-do'. You get the idea. So, kaku-bocho - a knife with angles, in contrast to a knife with a point. We were tempted to simply call it a nakiri - it's pretty close in spirit to a nakiri - but the height of the blade makes this altogether something new. A kaku-bocho. Light and lovely.
