Product Description

Japanese knife names can get confusing. If you've never come across a 'kaku-bocho', the name refers to the square shape of this knife.

In Japanese a triangle is a 'sankaku', 'san' meaning three. A square is a 'shikaku', 'shi' in this case meaning four. Angle is 'kaku-do'. You get the idea. So, kaku-bocho - a knife with angles, in contrast to a knife with a point. We were tempted to simply call it a nakiri - it's pretty close in spirit to a nakiri - but it's a kaku-bocho. Light and lovely.

I was so excited whilst I was waiting for this knife, Toshio Nakamura san's work never disappoints me, I have tried other blacksmiths knives, but none of them ever comes close to his masterfully forged knives. Now that I has his kaku-bocho for a few days I feel like I'm ready to write this review.
Delivery was extremely speedy, I only needed to wait about 5 days from placing the order, it was very well packed and prepared, placed in a simple, beautiful box, with a lovely paper blade guard, very well thought which I really appreciate personally.
At first glance the kaku-bocho is beautiful, it's like a nakiri, but not exactly the typical type, not so tall, and this actually makes this knife well more controllable than a nakiri, it's very light but slightly more weight to it than other nakiri I have, I think in this case that actually only beneficial to have a very slightly more weight that helps with slicing, chopping ingredients. It glides through everything that I sliced or chopped. I really enjoy using this knife, it is a real masterpiece that just feel right at each slice, it shows a lifetime experience of creating a reliable tool that behaves exactly as it is intended. After a busy day at work, I just use a Belgian blue natural stone to keep up it's scary extreme sharpness.
It's quite difficult to put all my thoughts about this kaku-bocho in words, it's simply phenomenal.
I'm very grateful that it was possible for me to purchase another work of Toshio Nakamura san, and it was a very pleasant experience from the day of purchase, special thanks for the flyer, that made my day!
