This santoku has a trick up its sleeve. Actually, up its handle. A stainless tang.
Look at our product photos above and you might discern a material line above the choil that shows the transition from thin blade to some chunky stainless goodness. It simply translates to less chance of rust invading inside the handle over time. Not a lot of knife makers go to the trouble. We like the philosophy behind it: nagamochi, long use.
We also like a light, hand-forged santoku with a good-sized handle and this is one of those; nice if you have large hands and share your santoku with someone who doesn't.
