Yoshimitsu Hamono Black-forged Gyuto 180mm Aogami Super
Aogami Super is about as good as it gets when it comes to Japanese cutlery steels. High hardness, amazing sharpness, terrific edge retention. Even better when it's worked into a fine gyuto blade by one of west Japan's leading knife makers, and attached to a nice handle. Then you have a Yoshimitsu gyuto.
Yoshimitsu Hamono has been around since about 1650. The present generation - tenth in its Shimabara city location - produces kitchen knives of stellar quality and sharpness.
