Aogami Super is about as good as it gets when it comes to Japanese cutlery steels. High hardness, amazing sharpness, terrific edge retention. Even better when it's worked into a fine gyuto blade by one of west Japan's leading knife makers, and attached to a nice handle.
Yoshimitsu Hamono has been around since about 1650. The present generation - tenth in its Shimabara city location - produces kitchen knives of stellar quality and sharpness.
