Yoshimitsu Hamono Black-forged Gyuto 210mm Aogami Super
Product Description
Aogami Super is about as good as it gets when it comes to Japanese cutlery steels. High hardness, amazing sharpness, terrific edge retention. Even better when it's worked into a fine gyuto blade by one of west Japan's leading knife makers, and attached to a nice handle.
Yoshimitsu Hamono has been around since about 1650. The present generation - tenth in its Shimabara city location - produces kitchen knives of stellar quality and sharpness.

Awesome grind
Posted by Mats on 28th Dec 2024
It is ootb sharp with an awesome grind. The knife cuts very very satisfying, it is such a joy to use. I hope edge retention will be well caused by the use of Aogami Super core steel. Rust should not be a big thing and the patina will be very well. The price is good if you are not into perfect optics, cause the handle is simple and the look of the Korouchi is very basic. You can see the handcrafted hammered blade, I like this. The tip is not too thin, there are thinner around in the market. I truly recommend this knife and the very friendly shopowner.

This really is a beautiful knife. Pictures don't do justice. Apart from precise craftsmanship edge retention is amazing, well suited for daily use. I won't need better knife in my life.
