If you see a word that starts with 'za' in Japanese, chances are it's got something to do with sitting. A zabuton is a futon that you sit on. Za-zen is seated contemplation. We've called this knife a za-bocho because it's designed to be used in a seated position. 

Kamotou has worked with Associate Professor Shigeto Takimoto of Sugiyama Jogakuen University in Nagoya to produce the za-bocho for users with hemiplegia and those preparing meals in a wheelchair-accessible workspace.
