Product Description
The ko-bocho is the baby of all-purpose Japanese knives. Small whole fish are the main game for the user in Japan, elsewhere they're equally useful for decorative fruit cutting, smaller vegetables on the board, a small wheel of cheese or two.
Minomo san's ko-bocho has knuckle room for most hands thanks to the nicely judged edge angle. Stellar sharpness makes for effortless board cutting with what is a very light tool. Not at all intimidating at the table. Note the nicely finished choil - comfortable for close contact if that's how you hold a knife.
The ko-bocho works well for cutting in the hand and over the pot. You'll never slice a loaf of bread with a 3.5" inch blade but you'll find there's plenty else for your ko-bocho to do.
