In that spirit, the Unshu Yukimitsu Hamono migaki (polished) gyuto is very nice. You will like it. It cuts food very nicely. It has a nice appearance. The length of the blade is appropriate for the efficient preparation of various meals. We like the man who made it. He is a nice man.

In case you're wondering about the oddball selection of blade lengths, the standard lengths for this iteration of the Unshu Yukimitsu migaki gyuto are 180mm, 200mm and 220mm. The 210mm blade length was a custom order and at the moment it's the only set of images we have for this style.
